Brewing Community and Culture: The Story of Fusion Brew
When Sarah Hovar and her dad opened Fusion Brew nearly 20 years ago in Bloomington-Normal, they weren’t just launching a coffee shop — they were creating a community hub. Now, as Fusion Brew prepares to celebrate its 20th anniversary, Sarah reflects on the journey, the unexpected joys, and the enduring impact the shop has had on its customers and community.
A Family Dream, Steeped in Tradition
The roots of Fusion Brew trace back to family vacations and her dad’s business trips to California, where he discovered his love for bubble tea. At the time, bubble tea was a novelty — even to Sarah. But it soon became a family passion, one they decided to bring home.
“There were no dedicated bubble tea shops in Bloomington-Normal back then,” Sarah recalls. “We wanted to introduce something new — a space where people could come together and experience something different.”
Opening a coffee and bubble tea shop wasn’t just about drinks. It was about creating an environment where people could connect — a value that remains at the heart of Fusion Brew to this day.
Twenty Years and Countless Memories
Fusion Brew’s first weekend opened without advertising, yet the space was buzzing with people. That humble start set the tone for what the shop would become — a gathering place. Since then, it has witnessed everything from first dates to wedding proposals, lifelong friendships to surprise visits from former regulars.
“I never expected the depth of relationships we’d build here,” Sarah says. “Some of our employees met and got married. Former customers still check in with us years later. It’s more than a coffee shop — it’s part of their story.”
A Day in the Life
Running Fusion Brew is no small feat. Sarah’s days start as early as 6 a.m., filled with everything from recipe development to social media, event planning, and catering. She crafts the shop’s unique drink menus and names — balancing creativity with efficiency for her team.
Her personal favorites? The Fusion Milk Tea — a house favorite made with a special tea blend — and their house-made lavender syrup, infused with real buds for a rich, aromatic experience.
A Menu for Everyone
Fusion Brew offers more than just drinks. Partnering with local bakeries like Ivy Lane, the shop provides a rotating selection of pastries, muffins, and gluten-free treats. “We really do have something for everyone,” Sarah says. “Unless you only drink water — but hey, we have that too!”
Built by Community, Sustained by Legacy
Located near Illinois State University, Fusion Brew has become a staple for both students and long-time residents. Professors use it as a case study in business classes, and Sarah loves seeing a mix of ages in the space — from moms with babies to retirees enjoying a quiet read.
“It’s this constantly recycling legacy,” she says. “Students come, then send their siblings or friends. It’s humbling to be a part of people’s lives in that way.”
Local Favorites and Lasting Inspiration
Beyond Fusion Brew, Sarah is a big fan of Bloomington-Normal’s vibrant food and culture scene. She loves local spots like The Rock, Carl’s Ice Cream, Thai House, and spending summer evenings at the Illinois Shakespeare Festival.
“There’s always something to do — especially in the summer,” she says. “You just have to look.”
Looking Ahead
With nearly two decades behind them, Sarah and her team continue to evolve. A major remodel in 2019 added grab-and-go features just in time for the pandemic — a silver lining in uncertain times. And as the shop prepares for its next chapter, Sarah is as energized as ever.
“Fusion Brew has never just been about the drinks,” she says. “It’s about making space for people to feel welcome, connected, and inspired.”
Whether you're a first-time visitor or a longtime regular, Fusion Brew offers more than a caffeine fix — it offers a place to belong.
